Described and illustrated in Aronson 2019, pp. 144-145, no. 73

NOTE
DHerring dishes are a longstanding part of the Dutch tradition of herring consumption, where herring is typically served with chopped raw onions and pickles. The Dutch have been eating herring for over a millennium, initially fishing for personal use. However, around the year 1000, commercial herring fishing emerged, spurred by the abundance of herring shoals in the North Sea. Coastal fishing villages quickly developed, taking advantage of this accessible resource. One of the key innovations in the Dutch herring industry was the preservation method called
“gibbing” (Dutch: haringkaken), invented in the late fourtheenth century by Dutch fisherman Willem Beukelszoon. This process involved removing the gills and some internal organs, while leaving the pancreas intact to aid in curing the fish. This method significantly extended the shelf life of the herring, enabling large-scale fishing and export throughout Europe. From the sixteenth to the eighteenth century, herring fishing became a major economic driver for the Netherlands. In the early seventeenth century, the Dutch herring fleets comprised an estimated 770 ships, far outnumbering the 150 to 200 ships involved in whaling during the same period.

Despite being called raw herring, the dish is not actually raw. The herring is first frozen and then salted for several days to allow it to ripen (producing soused herring). This process made herring not only nutritious but also affordable, with a long shelf life when stored in salted barrels, making it a valuable winter food source.

Delftware herring dishes were common in Dutch kitchens. In addition to a series of plates depicting the journey from herring catch to consumer, various types of herring dishes were produced. These dishes were often shaped like fish or designed in oval or rectangular forms, decorated with images of herring.

NOTE
Delft flower baskets, designed for floral arrangements, have been part of the assortment of Delft potteries since the second half of the seventeenth century. Some factories even employed specialists dedicated exclusively to the production of these so-called bennetjes. Several dated examples indicate that such baskets were often presented as gifts for special occasions, highlighting their role as both functional and decorative objects. Notably, many royal collections feature Delft flower baskets, including those in the Royal Palace Het Loo in Apeldoorn.

This mid-eighteenth-century pair, with its intended use indicated on the bottom, demonstrates that flower arranging in ceramic baskets was still occasionally practiced at that time. However, given the limited number of surviving examples from the eighteenth century, it is likely that the peak of this tradition occurred in the last quarter of the seventeenth century. The intricate craftsmanship required to create such a finely open worked basket, combined with its refined painting, suggests that this pair was produced by a highly skilled artisan.

NOTE
In Christian culture, the pig or boar is traditionally regarded as a symbol of vice. It may also serve as an allegory for the synagogue, as stated in Lucia Impelluso, Nature and its symbols, 2004, p. 267. The particular seated boar presented here is inspired by Il Porcellino, the famous bronze fountain in Florence. The original sculpture was created by Pietro Tacca (1577–1640) in 1612. In 1857, the original was replaced by a copy, and the original was subsequently added to the collection of the Bardini Museum in Florence. Tacca’s work itself was modeled after an Italian replica of an ancient Greek marble sculpture depicting the Calydonian Boar. This legendary creature, central to Greek mythology, was hunted by Atalanta and Meleager, as recounted in Ovid’s M e t a m o r p h o s e s (Book 8).

Peyre-Sieberth, Paris, according to the original label on the reverse;
Dutch Private Collection;

NOTE
From a simple oval or circular utilitarian metal form, barber’s bowls in Delftware developed throughout the eighteenth century into elegant rococo shapes. The round or oval depression at the side of a barber’s bowl was not intended to house a piece of soap but rather a shaving ball. The customer put this small wooden ball in his mouth between his cheek and gum while being shaved by the barber in order to get a closer shave. The oval neck notch on the bottom of the bowl fit against the throat of the customer, which caught the soap from falling on his clothes.

NOTE
Delftware figural groups like the present seated lady were probably influenced by Meissen examples when the exorbitantly decorative rococo style swept through Europe in the eighteenth century. The style began in France during the reign of Louis XV, and quickly spread to other parts of Europe, particularly Bavaria, Austria, Germany and Russia. The style was a reaction against the more formal and geometric style of Louis XIV. Although it is not considered a Dutch phenomenon, the rococo style was integrated into architecture and interiors in the Netherlands in the second half of the century.

With its playful and witty themes, rococo rooms were designed as a total work of art with elegant and ornate furniture, ornamental mirrors, and tapestry complementing architecture, reliefs, and wall paintings. The rococo interior was adorned with numerous ceramic objects, which were displayed on console tables, dining room tables, in showcases or on pedestals. These ceramic objects may have included Delft faience, or porcelain made in Sèvres or Meissen, centers that produced many small scale works in series.

The Delftware potters and painters experimented with rococo ornamentation to both break with the oriental models and to follow the new German and French styles. The German influence originated after a considerable amount of Meissen porcelain was imported to the Netherlands. The competition from Meissen, whose products were specifically designed for the European elite, first caused trouble for the Delft industry. However, the Seven Years’ War (1756-1763) interrupted the production of many German and French factories, which caused a severe reduction of the porcelain available in Holland and an influx of emigration of German and French craftsmen into the Netherlands. The Delft factories thus rose to meet the demand for the popular rococo ceramics.

Consequently, a tremendous amount of human and animal figures of various sizes and models were produced by the Delft masters in order to satisfy a range of tastes. While these playful objects embrace the rococo spirit, they equally exude a characteristic Dutch charm and insouciance. Like in Germany, the human and animal figures of Delft were exhibited in showcases or on pedestals.

Marked with an axe in manganese for De Porceleyne Byl (The Porcelain Axe) factory

The front, reverse and sides of the bombé tureen and cover painted in manganese with a fenced garden scene with stylized rock work, flowering branches and shrubbery, two manganese-ground foliate loop handles, the cover surmounted by a knop formed as a yellow corn with green leaves, and the center of the stand with a similar fenced garden scene, encircled by two manganese foliate scrollwork bands.

DIMENSIONS
Overall height: 30.5 cm. (12 in.) Length of stand: 37.4 cm. (14.7 in.)

NOTE
The fashionable dining à la Française (in the French manner) swept through Europe during the eighteenth century. Inspired by the French court of Louis XIV (1638-1715, reigned 1643-1715), guests were served numerous dishes at once during the formal dinner service. A 1790 Housekeeper’s Instruction illustrates that a dinner à la Française included three courses: the first of “soups, boiled poultry, fish and boiled meats,” the second of “different kinds of game, high seasoned dishes, arts, jellies, etc.,” and the third consisted of a dessert course of “fruits, and various kinds of ornamental pastries…”.

Dining à la Française necessitated a wide range of tablewares to complement the numerous dishes, many in the form of tureens and platters. Further, the introduction of new dishes at the end of the seventeenth century encouraged the invention of new tableware. One example is a ragout of meat, a meal that needed to be served in a deep tureen. Large tureens were also used for soups and stews, while the smaller tureens were intended for sauces and creams. While the tureen originally functioned to keep the courses warm, the form also played a distinct decorative role on the dinner table. As the largest serving ware, it was typically designed as the most decorative and impressive object, and acted as the centerpiece on a formal dining table. The panoply of wares were symmetrically arranged on the table and within reach for guests to serve themselves, making it a socially dynamic style of dining. The practice was an opportunity to showcase the culmination of splendor in the meal as well as the elaborate serving wares.

SIMILAR EXAMPLES
Small tureens in all sorts of shapes were a characteristic form produced by Delft factories. The wide variety of these tablewares suggests that they were produced by numerous potteries in the city. Large tureens are however rather rare in Delftware. A rather similarly shaped tureen surmounted with an artichoke, produced in the city of Arnhem around 1765 is in the Rijksmuseum, Amsterdam (inv. no. BK-NM-11622). Another manganese-decorated tureen produced in Arnhem around 1770, lacking its stand, is in the Rijksmuseum, Amsterdam (inv. no. BK-15134).

Aronson Antiquairs, Amsterdam, 2006;
The Van der Vorm Collection, The Netherlands

Note
At the end of the seventeenth century, large tureens in silver, and later ceramic, were the centerpieces for grand services. However, smaller tureens in the form of animals and birds predate this practice. Early in the seventeenth century, these small, naturalistic forms acted as the serving ware for pies on festive occasions. The fancy and decorative pastry forms were even embellished with plumes and bird heads, which can be seen in period paintings.

By the middle of the eighteenth century, naturalism reigned in ceramics with the increased interest in botanical and zoological subjects. The ‘trompe l’oeil’ style was at its zenith in the faience of Strasbourg in France and the porcelain of Meissen in Germany and Chelsea in England. All of these centers of production served as the inspiration and models for Delft potters, who created their own unique versions of both domestic and exotic animals for their eager clientele.

Similar examples
Although birds and fowl were beloved subjects of inspiration for the Delft potters and many different forms were produced, no other pair identical in model to these seems to be published. A singular duck tureen and cover, marked AP for Anthonij Pennis, is in a Belgian private collection.
